Cookies and Crackers

Lemon Fire Crisps

 

Ingredients:

  • 2 Sticks butter or margarine

  • 1/4 ts Salt

  • 1 ts Cayenne powder

  • 2 1/4 c Flour

  • 1 Egg

  • 2 tb Grated lemon peel

  • 1 tb Lemon juice

  • 1/2 c Sugar

  • room temperature

  • 1/4 ts Baking soda

Method:

  • Preheat oven to 400 degrees Cream the butter and sugar until light and fluffy.

  • Add the lemon juice, lemon peel, and egg and beat well.

  • Sift the dry ingredients together.

  • Beat into the butter mixture.

  • Place the mixture into a cookie press, and force the dough onto an ungreased cookie sheet.

  • Bake for 8 minutes or until cookies are lightly browned.

  • Yield: 6

  • Dozen Heat Scale: Mild
