Beetroot and Orange Salad

 

Ingredients:

  • 1 beetroot, cooked, peeled and drained

  • 1-1/2 cup boiled rice

  • 4 oranges

  • Salt to taste

  • Black pepper to taste

Dressing

  • 1/2 tsp orange rind, finely grated

  • 1 garlic clove, crushed

  • 1 tbsp mustard powder

  • 2 tsp honey

  • 4 tbsp yoghurt

Method:

  • Slice the top and bottom off each orange. Remove the skin and pith.

  • Holding the orange over a bowl, carefully slice the segments.

  • Collect the juice in the bowl and leave to chill.

  • Place the segments in a separate bowl.

  • Dice the beetroot into small cubes, mix with the orange segments and leave to chill.

  • In a bowl mix rice with orange juice and season with salt and pepper.

  • In a salad plate spoon over rice and top with the beetroot and orange mixture.

  • Mix all the dressing ingredients together and spoon over the salad or serve separately in a bowl.
