Beetroot and
Orange Salad
Ingredients:
Dressing
Method:
-
Slice
the top and bottom off each orange. Remove the skin and
pith.

Holding the orange over a bowl, carefully slice
the segments.
-
Collect the juice in the bowl and leave to chill.
-
Place
the segments in a separate bowl.

Dice
the beetroot into small cubes, mix with the orange segments
and leave to chill.
-
In a
bowl mix rice with orange juice and season with salt and
pepper.
-
In a
salad plate spoon over rice and top with the beetroot and
orange mixture.
-
Mix
all the dressing ingredients together and spoon over the
salad or serve separately in a bowl.
