Cold Chicken
Salad
Ingredients:
-
Chicken Breast
boneless 2, boiled and cubed

Potatoes 3 boiled,
peeled and cubed
-
Carrots 3, boiled and
chopped
-
Green peas 1 cup,
shelled and boiled
-
Apples 2 chopped and
sprinkled with sugar and lemon
-
Pineapple 4 slices,
chopped
-
Capsicums 2, remove
seeds and white pith, chop fine.

Almonds 10-12 peeled,
roasted separated in
tow
-
Raisins 10, soak in
hot water and roast on tawa
-
Fresh cream 1
cup
-
White pepper 1 tsp,
powdered
-
Sugar ½
tbsp
-
Salt to
taste

Sauce
Method:
-
Heat
butter in a small pan, add sifted white flour and stir till
it changes color slightly. Remove from heat. After five
minutes pour milk in it and stir constantly. Put the pan
back on heat; continue to stir till the sauce thickens.

Remove
from heat and add salt and pepper; le it cool. Combine fruit
and vegetables, almonds, sugar and salt in a large bowl. Add
the white sauce and cream. Mix well.

Sprinkle raisins
on top.
