Luncheon Salad

 

Ingredients:

  • 250 g roast beef, cooked

  • 2 red or green peppers

  • 2 tomatoes

  • 1 medium onion

  • 1 clove garlic

  • 3 tbsp oil

  • 2 tbsp vinegar

  • few sprigs parsley

  • 3 lettuce leaves

  • Salt and pepper

Method:

  • Roughly dice beef, red peppers, tomatoes and onion and mix all together in a bowl. Crush garlic with a little salt, add oil, vinegar and pepper and mix well.

  • Pour over salad and leave to marinate for 30 minutes. Sprinkle with chopped parsley. Arrange salad on a serving dish lined with lettuce leaves.

  • Serve with white or brown bread and butter.

Servers 4
