Luncheon Salad
Ingredients:

250 g roast beef,
cooked
-
2 red or green peppers
-
2 tomatoes
-
1 medium onion
-
1 clove garlic
-
3 tbsp oil
-
2 tbsp vinegar
-
few sprigs parsley
-
3 lettuce leaves
-
Salt and
pepper
Method:
-
Roughly
dice beef, red peppers, tomatoes and onion and mix all
together in a bowl. Crush garlic with a little salt, add
oil, vinegar and pepper and mix well.

Pour
over salad and leave to marinate for 30 minutes. Sprinkle
with chopped parsley. Arrange salad on a serving dish lined
with lettuce leaves.

Serve
with white or brown bread and butter.
