Vegetable Salad with Chili and Peanuts

 

Ingredients:

  • New Potato 300 halves

  • Cauliflower 250 gm chopped Medium

  • Carrots 2 no sliced

  • Small red cabbage ½ shredded

  • Bean sprouts 2 cup or 160 gm

  • Long green cucumber 1 no chopped

  • Boiled eggs 4 no

  • Black and yellow Raisins 3,4 tbsp

Ingredients Peanut dressing

  • Butter 300 gm

  • Curry powder 1 ½ tsp

  • Ground cumin 1 tsp

  • Plain flour 1 tsp

  • Sweet chilly sauce 2 tbsp

  • Crunchy peanuts ½ cup

  • Brown sugar 1 tbsp

  • Coconut cream 400 ml

  • Medium onion finely chopped

  • Peanuts crushed 1 cup

Method:

  • Boil, steam or microwave potatoes, cauliflower, carrots separately until just tender, drain, rinse under cold water, drain. Place cabbage on plate top with cooked vegetable, sprouts, cucumber and egg, peanut dressing, and raisin.

  • Method for Peanut Dressing: Heat butter in pan, add onion, cook, stirring until soft. Next add peanuts, curry powder, cumin, flour and chilly sauce, cook, stirring 2 minutes stir in peanut crushed, sugar and coconut cream. Simmer uncovered about 10 minutes or until slightly thickened.
