Salad with Chili and Peanuts
Ingredients:

New Potato 300
halves

Cauliflower 250 gm
chopped Medium

Carrots 2 no
sliced

Small red cabbage ½
shredded

Bean sprouts 2 cup or
160 gm

Long green cucumber 1
no chopped

Boiled eggs 4

Black and yellow
Raisins 3,4 tbsp
Ingredients
Peanut dressing
Method:
-
Boil,
steam or microwave potatoes, cauliflower, carrots separately
until just tender, drain, rinse under cold water, drain.
Place cabbage on plate top with cooked vegetable, sprouts,
cucumber and egg, peanut dressing, and raisin.

Method for
Peanut Dressing: Heat butter in pan, add onion, cook,
stirring until soft. Next add peanuts, curry powder, cumin,
flour and chilly sauce, cook, stirring 2 minutes stir in
peanut crushed, sugar and coconut cream. Simmer uncovered
about 10 minutes or until slightly thickened.
